My son asked for a coconut cream pie for his birthday. I tried out my mom's recipe, and it didn't set up. She said that I did it exactly right, but for whatever reason...it didn't work. I hate throwing out anything, so I've been trying to think of a good way to use it. After making blackberry ice cream earlier in the week, which is a custard-based recipe, I thought...hey...the pie filling is a custard!!!! Let me try that! My son loved it! I wanted to show that kitchen mistakes can be turned into something beautiful!!!!! Thanks so much for watching!
